The main care is to bring red grapes to the cellar that have the right ripeness but still have good acidity. The big challenge occurs when collecting the liquid, which occurs a few minutes after the bunches have been destemmed and placed in the tank. After a very short maceration, without pressing the skins, we extract the must. With intuition and experience we evaluate when to stop, it is of fundamental importance to achieve a good presence of polyphenols, while leaving a pale and elegant color. We want a fine and Proven\u00e7al color but also a present and persistent body. This is then followed by fermentation at a controlled temperature in steel and a very light passage in French wood. The floral and fruity aromas combined with a gentle freshness make our ros\u00e9 easy to pair with fish cuisine and white and occasionally red meats. Excellent for an aperitif and for pairing with fruit desserts.  PRODUCTION METHOD: Manual harvest of the grapes, short maceration (10 min) in concrete, linear extraction, fermentation in steel tank. 50% of the product is aged in second passage French barriques for 60\/70 days. Finally it rests in the bottle for 3 months.  TASTING NOTES: Pale pink colour, austere and rich nose, with fragrant notes of grapefruit, blond orange and wild strawberry, floral hints of rose and green pipe. In the mouth, savory, balanced, long finish with a fruity return of raspberry and strawberry."}
