Trebbiano, Clarette e Ansonica
Faden is a wine derived from the modern elaboration of the wine traditionally produced by farmers in the Suvereto area and now abandoned. To create it we took care of a 60-year-old vineyard composed mostly of Trebbiano, Clarette and Ansonica plants. The characteristic of this vineyard is the alternation of the vines in a random way, it follows that the harvest takes place in a single harvest, assembling the grapes in a wooden press and pressing them all together. The result is a very balanced product, with delicate and exclusive aromas, a little retro, exceptional in its simplicity because vineyards like this no longer exist. With its slim and soft body it can be combined with practically all food.
PRODUCTION METHOD:
Co-fermentation, not blend. The manually harvested grapes are immediately placed in a cold room at 8° for 24 hours and subsequently destemmed and pressed, the resulting must is cooled at a temperature of 7° for 48 hours, the clarified liquid ferments in steel for approximately 20 days at 16°, rest on the fine lees for 6 months and 3 months in the bottle.
TASTING NOTES:
Straw yellow color with golden reflections, rich and complex nose, broom, citrus notes, green apple, white peach, very mineral mineral. Balanced, clean and soft on the palate.
